In the article we show the investigations of aromatic wine produced from grapes of Sauvignon blanc grown in AF South in Temryuk District. As a result, the article estimates obtained good organoleptic characteristics of the taste, within 7.3-7.9 points, which is higher than the passing score. It was found that the greatest negative impact on the formation of mutual organoleptic properties have such flavors as metilatse-tal and the amount of volatile acids

APOLLON – THE NEW WINE HIGH QUALITY GRAPE VARIETY WITH BLACK BERRY

Universal black-berry Apollo grape has been launched in Greece by P.Zamanidi, L.Troshin and A.Isachkin in 2003 with combinative selection - crossing of the Fi-lery Greek variety with the French Cabernet-Sauvignon. The duration of the production period 136-145 days. The strength of growth of arms is strong (2,1-3,0 m), the degree of maturation of the vines is high. Crop yields are very high - 35-40 t/ha. The aver-age mass of clusters is 430 g. It is characterized by high winter hardiness, drought-resistance and high resistance to fungal diseases in comparison with varie-ties of Vitis vinifera. The flower is bisexual. Cluster is big or very big, conical with the wing, loose. Berries are medium or large, oval, blue-black in color, with a thick wax coating. The skin is thick. The pulp and juice - with varietal flavor. Sugar content is high. Notable for long saving the harvest in the bushes, well-kept in the cooler cells. The variety is meant for the fresh consumption and for manufacture of red dry, desert and sweet wines; suitable for production of high-quality juices

APPLICATION OF THE INFORMATION THEORY AND COGNITIVE TECHNOLOGIES FOR SOLVING PROBLEMS OF GENETICS (on the example of calculation of the amount of information in the genes about characteristics and properties of the various indigenous grape varieties)

It is well known that genetics studies the mechanisms of variation/heredity and widely uses the concept of "genetic information". While genetics considers the information as the content of the genetic code - structure of DNA and RNA included in the cell of a living organism. Genetics examines the mechanisms of recording, copying, readout of genetic information, the possibility of its modification and its influence on the characteristics and properties of the organism. In conversational and scientific language we know phrases, such as "Genes contain information about the characteristics/properties of the body." Paradoxically, we see no attempts to determine the amount of information contained in specific genes on specific characteristics or phenotypic properties of the organism. It would seem that the application of information theory in genetics is a completely natural and suggests itself. More strange that there are practically no works devoted to the application of information theory for solving problems of genetics. This article is intended, to some extent, to fill this gap on the example of calculating the amount of information in the genes of the characteristics or properties of different grape varieties. It examines the application of automated system-cognitive analysis (ASC-analysis), its mathematical model – system of information theory and software tools – intellectual system called "Eidos" for solving one of the important tasks of genetics: determine the amount of information contained in the genes on various phenotypic characteristics/properties of the grapes. To solve this problem, we perform the following steps: 1) cognitive-targeted structuring of the subject area; 2) the formalization of the subject area, i.e. development of classification and descriptive dials and graduations and training samples; 3) synthesis and verification of information model, reflecting the amount of information in the genes on the phenotypic characteristics/properties (multiparameter typing); 4) displaying the information about the genetic determination system of phenotypic characteristics/properties (SWOT analysis of Fennovoima); 5) displaying the information about the strength and direction of influence of a specific gene on phenotypic characteristics/properties (SWOT-diagrams of genes); 6) the solution to the problem of system identification phenotypic characteristics/properties by the presence of certain genes; 7) quantification of the similarities-differences of the various phenotypic characteristics/properties, upon determination system genes. A specific phenotypic property (or characteristic) is regarded as a noisy genetic text, including genetic information about the true gene property (clean signal) and the noise that distorts this information due to the random effects of the environment. The software tool of the ask-analysis which is "Eidos" intellectual system provides the noise suppression and the selection of true signal

ARTEMIS - NEW GREEK-RUSSIAN WINE FRAGRANT HIGH-GRADE WHITE-BERRY GRAPE VARIETY

The sort of Artemis is created as a result of the Greek-Russian scientific creative cooperation, it is breed in Greece P.Zamanidi and L.Troshin in 2003, by mating of the Greek sort of Kondokladi with Traminerom pink introduct. Duration of rule-oriented phase is 146-155 days. Productivity is high. The medial mass of a racemation is 140gr. BIOCHEMICAL COMPOSITION OF WINE MATERIALS FROM INTRODUCED GRAPE VARIETIES GROWN IN THE TEMRIUK DISTRICT OF THE KRASNODAR REGION

Introduced grape varieties such as Ancelotti, Bachka, Johanniter, Morava and Solaris which were grown in the conditions of Taman provided production of high yields of grapes with standard conditions of sweetness and acidity of grape juice that were useful for the technical processing of not only tableware, but also for special wines, in particular, dessert. Organoleptic properties of all the studied wine materials from grapes of these varieties were of high quality, which was con-firmed by their tasting evaluation. They are recom-mended for the preparation of organic (bio) wines. The "Biologik" wine in 2012 received a certificate of the high points at the international exhibition in Italy (Rome), and the wine from red grape variety Ancelotti for several years, winning awards from international wine competitions ("Yalta. Gold Griffon", "Gold au-tumn")

BIOCHEMISTRY OF SOME PERSPECTIVE TABLE GRAPES

The article contains results of the study of biochemistry of some perspective table grape varieties: Aniuta, Vodograi, Nizina and Jubilee Novocherkasska, yield in 2013 from the Central zone of Krasnodar region. At the time of redy yield the combination of sweetness and acidity of fruits were favorable. The ratio of fructose to glucose was 1.69; 1.36; 2.00; 1.13, respectively, in grapes Aniuta, Vodograi, Nisina, Jubilee Novocherkasska. According to the percentage of fructose in fruit juice varieties Aniuta, Vodograi and Jubilee Novocherkasska close to each other (50.93; 56.14; 51.23%). According to the percentage of glucose similar varieties Aniuta and Nizina (33 - 34.27%), Vodograi and Jubilee Novocherkasska (41.16 - 45.22%). Sort Jubilee Novocherkasska, had content in berries close fructose and glucose. Most of fructose (66.02%) in berries variety Nizina. In berries studied cultivars organic acid content was: wine 3128 - 3861, malic 982 - 3753, citric 109 - 317, amber 3 - 115 mg / dm3. The highest concentrations of potassium and sodium cations are presented in berries varieties Aniuta: potassium - 1219 sodium - 35.13 mg / dm3 and cations magnesium and calcium in berries Jubilee Novocherkasska 46.75 and 73.64 mg / dm3. The lowest concentration of potassium and sodium cations observed in grape Vodograi, magnesium - from grape Aniuta, calcium - at grape Nizina. We studied grape bunches are large, not dense, beautiful, berries are large, harmonious taste. Tasting score fresh grapes varieties Aniuta, Vodograi, Nizina, Jubilee Novocherkasska 7.6; 7.4; 7.8; 7.8 points respectively

BIOMETRICAL ESTIMATATION OF THE POLYMORFISM OF GRAPE GROUP OF PINOT AND RIESLING BY MORFOLOGICAL CHARACTERISTICS OF THE MIDDLE PART OF THE TREE

The polymorphism is the diversity of varieties in ampelografy - the presence simultaneous permanent in the population of two or several phenotypic and genotype differing groups of plants of one variety – i.e. clones. In viticulture the isogenic population is usually called “clone” and variety as the total of clones or forms – i.e. it is heterogenic. Polymorphism of varieties has big practical sense, as varieties-clones have the harmonic complementary adaptive ampelocenosis and higher economical effect for production. BIOTECHNOLOGY – SCIENCE AND SECTOR OF AGRICULTURE

This article presents information about the features of biotechnology as the driving force of scientific and technological progress. The national programs of the leading countries of the world, it is one of the priority sectors, reflecting the level of the socio-economic condition of the society. Biotechnology is now successfully solves such vital tasks as providing food, the establishment of effective medicaments, obtaining fuel based on renewable raw materials, maintaining ecological balance, conservation of biological resources of the Earth. The development of agriculture in modern conditions is impossible without agricultural biotechnology. It is directly related to viticulture. Choosing an object of an integrated system (embryos, apical meristem, axillary buds), it is possible to clone plants, i.e. produce plants identical to the original. If the same as the object to use isolated cells or protoplasts, in this case, there will most likely altered versions, creating diversity for the breeder. Genetic engineering – the science of younger, since the establishment of the first chimeric DNA molecule. The origin of genetic engineering is rooted in the development of molecular genetics, biochemistry. These technologies, undoubtedly progressive, but their biological safety is still insufficiently explored and is a danger to all life on Earth. The leading Western powers carried out strict control over the introduction of transgenic crop plants, as they are in agrocenosis new biological risks that may adversely affect the plants, animals and humans. In Russia, as in other countries, have already adopted the law “State regulation of genetic engineering”
