In the article, the medical and biologic characteristic of the way of polysaccharide fraction (WPF) is de-scribed. Researches of WPF ferment and its concentrates are resulted. Use of ferment fractions is proved, as additives, which influences processes of manufacture of dough and gives a functional orientation to bakeries
In the article, the use of ferment way-polysaccharide fraction (WPF) in manufacture of bakeries as a com-ponent, which possesses high medical and biologic characteristics, is described; but it also influences a “force of flour” and a quality of protein of a flour
