MATHEMATICAL MODELING IN TECHNOLOGY AND QUALITY EVALUATION OF FOOD PRODUCTS

The analysis of scientific research in the field of food technologies has shown that mathematical modeling is applied in the following directions: adjustment of the modes of technological processes, development of compounding and quality evaluation of ready-made products, and also prediction of shelf life of new products during launching. Models of variance and regression analysis with application of methods of mathematical planning of experiment are most relevant in describing the processes of food production. The article contains the results of our own research about creating composition of fish preserves made of combined minced of fishes, bad-ripening and ripening in salting. The mathematical models of the dependence of organoleptic, structural-mechanical characteristics and characteristics of ripening of preserves on technological factors are presented. The dimensionless generalized index of quality was modeled and the composition of minced was optimized on the basis of its dynamics. It was established, that preserves which contain 42% herring Atlantic and 4,8% salt, have the best organoleptic, structural-mechanical and ripening characteristics. The regression model was developed, which determines the shelf life of wide range of fish preserves, depending on factors affecting it: storage temperature, acidity of the fill, proteolytic activity of the enzyme system of muscle tissue and also the speed of fish ripening, caused by addition of various functional and technological additives. Testing of the model shown, that calculated data of the shelf life of fish preserves correlate with the data obtained experimentally

MATHEMATICAL MODELING OF ELECTRO TECHNOLOGICAL OZONIZATION OF EGG STORES OF POULTRY FARMS

Sanitization of eggs is an essential way to fight bacteria, fungi and other microorganisms. Hatchability of eggs and the safety of day-old chicks are dependent on the quality of eggs processing. Leading scientists of our country have proved high efficacy of ozone application for processing of hatching eggs. To obtain a positive result by this method of sanitizing hatching eggs ozone, it is necessary to create a uniform concentration of ozone around the egg store volume. Decrease in ozone concentration from the set point may result in insufficient exposure to pathogens and because of this, may reduce hatchability. Significant excess of ozone concentration from the set point can kill the embryo. Because of mathematical modeling of electro eggs ozone treatment process, there was a mathematical model of the process of electroozonation of egg stores of poultry farms. This model takes into account decomposition of ozone on the surface of eggs and decomposition of ozone on the walls of an egg store. This mathematical model proves the desired control action at different initial data, such as: the required concentration of ozone in the egg store, the number of eggs, egg store geometric dimensions, the fan power, the design parameters of the discharge unit, the location of the ozone generator in the room

MATHEMATICAL MODELING OF HIGH VOLTAGE INDUCTION MOTORS FOR AGRICULTURAL ELECTRICAL POWER SUPPLY SYSTEMS

This article is devoted to solving the critical task of improving the reliability of the power systems for agricultural processing plants. The article’s material is exploratory in nature, reflected in the fact that the proposed mathematical models for the analysis of groups of high-voltage induction motors will allow to investigate various modes of symmetric groups of asynchronous motors more effectively. We present the analysis of the existing mathematical models of induction motors considering the design features of such machines that directly affect the dependence of resistance and inductance on the rotor current frequency. The assumptions taken into consideration to obtain a more accurate mathematical model of the induction motor are also formulated. The article provides a comparison of different reference frames used in the mathematical modeling of asynchronous motors. It is proved that the use of the generalized coordinate vector for mathematical modeling of asynchronous motors is the most optimal approach. The equivalent circuit of asynchronous deep-bar motor in generalized vector coordinates derived in the work is used for analysis of transient behavior as well as the steady state operation. The results of the study are suitable for transient analysis of electrical power supply systems of agricultural enterprises with large number of high-power electric motors, for example, CHP of sugar processing plants and grain elevators
