In the dairy industry, the segment of yoghurts and yoghurt drinks is one of the most dynamically developing. Competition contributes to the production of high quality products. The transition to market relations encourages producers to use new prescription ingredients in the production of various yoghurts. In addition, it is essential to improve the existing ones and create qualitatively new technologies of products with a directed change in the chemical composition. Sour-milk drinks not only satisfy the physiological needs of the body, but also have a preventive and therapeutic purpose. Utilization of these products contributes to the prevention of numerous diseases, as well as life prolongation and increase of working capacity. The dietary properties of sour-milk drinks are determined by the presence of “live” beneficial microflora and persist for a long time, as long as this microflora remains viable and pure. The article contains data distinguishing the effects of the use of commercial fermentation starters EKOKOM Laktina, TM GoodFood, Kaprina on the qualitative characteristics of dairy clots. The article specifies the influence of fermentation starters and vegetable fillers on the organoleptic parameters of the final sour-milk product. The authors of the article further present data describing the organoleptic and physicochemical quality profile of yoghurt enriched with vegetable fillers, obtained by introducing commercial fermentation starters of various manufacturing companies

INVESTIGATION OF HYDRODYNAMIC MIXER FOR BIODIESEL PRODUCTION FROM VEGETABLE OILS HYPERACIDITY IN CONDITIONS AGRICULTURAL ENTERPRISES

Тhe article presents an investigation of hydrodynamic mixer for biodiesel production from vegetable oils hyperacidity in the conditions of agricultural companies. The process of hydrodynamic mixer which mixes the flow of biofuels from jatropha oil with carbon dioxide to wash it. The regularities of disclosing the relationship of the parameters (diameter and length of the mixing chamber), the mode (the pressure and flow rate) from the medium (dynamic viscosity, density, elasticity) to the energy characteristics of the process (mixing power on). Based on the method of similarity and dimensions of physical quantities obtained criterion turbulence. A reduction in the flow pressure and agitation power with increasing diameter. We have justified the mode (pressure at the nozzle exit corresponds to the critical), in which the carbon dioxide gets into the mixing chamber properties of liquids, solutions for biofuels, and the mixture becomes a quasi-homogeneous. Based criteria of regime change from a supersonic flow in the subsonic, allowed us to determine the condition of quasi-homogeneity of the mixture. It is proved that we form a supersonic flow liquid-gas at the same time it is transformed into subsonic, accompanied by the acoustic cavitation effect leap remixing due to isentropic pressure jump. The article justifies the physics of cavitation effects of carbon dioxide on biofuels, result of which is to improve the physical and chemical properties of the medium due to the structuring of the molecules of the solution, which has a positive effect on the mixing

INVESTIGATION OF INDEXES OF QUALITY MANAGEMENT OF ELECTRIC- TECHNOLOGICAL PROCESS OF OZONATION OF POULTRY FACTORIES EGG-STOREHOUSES

Ozonization of incubation eggs when storing at an egg-storehouse is well included in technological process of production and egg sorting. Ozone influences absolutely all known viruses and microbes. Larger chickens are hatched from ozone-treated eggs, safety of chickens is increased. However, the present technology did not obtain the wide spreading in the sphere of poultry farming because of uneven concentration due to the volume of treated premises. In the result of mathematical modeling there was worked out the system of management with electrical and technological process of ozonization of egg-storehouses of poultry factories, indexes of quality the work of which was assessed in the system of automated projecting of logical-dynamic systems SimInTech. The summarized integral mean-square index (J = 9,7%) decreased on 19,3 % in comparison with the variant without regulation (J = 29%), that testifies on enough qualitative regulation of distribution of ozone concentration in an egg-storehouse and satisfies the shown acceptable value of the present index (no more 15%). On the basis of produced researches there was created the nomogram determining the tension of charging facility and discharge of a ventilator of electric ozonator in dependence on treated egg amount. In accordance with technical solutions there was worked out the principal electric circuit with system of electric equipment of electric technological process of ozonization of egg-storehouses of poultry factories on the basis of microcontroller ATmega8

INVESTIGATION OF NOISE AND VIBRATION OF CUTTING CIRCULAR SAWS

The article presents the results of theoretical studies of noise cutting circular sawing machines. Practical calculation of the noise spectra is based on the determination of the dependency of the sound pressure of the noise sources of the object of study. In the sound system, circular sawing machines sound energy is emitted by the following sources: disc cutter and the mandrel. Therefore, the dominant noise sources should be allocated to the technological subsystem "tool – mandrel” with a bit less rigidity than the carrier system of the machine and directly receives the cutting forces when milling. Thus, it is possible to reduce sound pressure levels in almost two ways: by increasing absorption production facilities and (or) decrease in sound pressure of the noise source. Fruits are an important part of the diet of humans and many animals. In case of an improperly organized process of storing of fruits, the loss of mass and decrease of quality can be substantial. This makes relevant the research, aimed at enhancing existing and developing new technologies of fruits storing. In this article, the results of the investigation of influence of complex treatment of fruits with electromagnetic fields of extremely low frequency (EMF ELF) and а biopreparation on the change of microbial contamination of their surface and on the loss of mass in the process of long-term storage are revealed. Apples of the Idared variety and pears of the Conference variety were the objects of research. The change of microbial contamination of the surface of fruits, undergone a few types of pre-treatment (EMP ELF, bio-preparation “Vitaplan”, complex treatment “EMP ELF + the biopreparation” and no special treatment), after storing during 7 months in case of pears and 8 months in case of apples is shown in the article. It was found, that the greatest decrease of content of microorganisms on the fruits’ surface is achieved as a result of the complex treatment, combining the treatment with EMP ELF and an aqueous solution of the “Vitaplan” bio-preparation. Technologies of fruits storing known at the present time, solving actual problems – slowing down biochemical processes, inhibiting ethylene synthesis, do not provide fully the preservation of quality of fruits due to not taking into consideration the peculiarities of microflora of fruits and microbiological processes, taking place during storage. Purpose of the research: investigation of influence of complex treatment of fruits with electromagnetic fields of extremely low frequency (ELF EMF) and the biopreparation “Vitaplan” on changing of losses of biologically active substances in the process of longterm storage. Objects of the research: apples of the Idared variety and pears of the Conference variety, regionalized in the Krasnodar region. Mass shares of the vitamin C and P-active substances were measured in the process of storing. ELF EMF treatment was conducted on an experimental installation. Fruits were exposed to the action of electromagnetic fields with specified parameters. Complex treatment of fruits (apples and pears) with ELF EMF and the biopreparation “Vitaplan” before dispatching for storage allows preserving the biologically active substances – the vitamin C and P-active substances – to the maximum degree. Synergetic effect, appearing due to the complex action of electromagnetic field and the bio-preparation, allows decreasing the processing time in the electromagnetic field
