The impact of pectins and its concentration on probiotic characteristics of the beverages has been studied for developing the formulation and technology of pectin beverages. Samples of sour-milk products with dry pectin (Unipectin OB 700) and liquid one (pectin apple extract is produced by SunLand) was made. Sour milk microorganisms and bifidobacteria content were defined. High sour milk microorganisms and bifidobacteria content as well as high rate in souring were revealed in the preparatory samples. However, liquid pectin is easier in use. Consequently, the formulation of pectin extract beverages was developed and optimized by using Mathematical Modeling. The samples of beverages were produced and their quality characteristics were evaluated. An optimal fruit/vegetable fillers / whey ration was defined to get the product which combined balanced micronutrient composition, its functional activities and gustatory qualities. For that a three-factor simplex-centroid design was used. The samples produced according to the design matrix were tasted and evaluated by color, flavor, aroma and consistency according to the ten score points scale. The findings were processed with statistical and graphical analysis. The last one used the construction of ternary graphs with the help of «Statistica 7,0» program that allowed to define the most acceptable ranges of fruit/vegetable fillers / whey components in the beverages: fruit juice – 4-16%; pumpkin juice-4-16%; whey -4%. Chemical composition, organoleptical indicators and physicochemical parameters of ready-to drink beverages were examined. As a result, these beverages have been recommended for school feeding as the source of dietary fiber, minerals and vitamins
The problem of documenting of process of accumulation of knowledge and development of the intellectual human capital is considered in this article. The purpose of the article is the research of theoretical approaches of documenting of process of accumulation of knowledge, development of the intellectual human capital and the analysis of domestic public corporations on documenting of process of accumulation of knowledge. The solution of research tasks in article is proposed: the analysis of the contents of theories of development of the human capital in the conditions of economy of knowledge is carried out; domestic practice of public corporations on documenting of process of accumulation of knowledge is studied; features of documenting of knowledge as maintenance of development of the human capital are marked out. The particular emphasis in the article is placed on disclosure of such problems, as: methodological and theoretical aspects of development of the intellectual human capital; formation of mechanisms and ways of documenting of knowledge in the conditions of knowledge economy; formation of corporate institutes of formation and the development of the intellectual human capital, realizing reproduction of the intellectual capital and engineering of knowledge; formation of organizational innovations and dumping of old organizational routines. Documenting of knowledge is presented as maintenance of development of the human capital, the project of introduction of knowledge management and its documentary maintenance in corporations, and also ways of network documenting of knowledge of the human capital in the process of joint design activity is offered. The article is devoted to modeling and analysis of gaming schemes in game theory to optimize production. The following scheme was designed for organizations engaged in production of seasonal items. To improve the economic viability of production of the three available types of products we offer using pure strategies. We have given the desire to maximize profit organization under the conditions when consumers seek to minimize their costs, and we simulate realistic market conditions. Theoretical overview of the selected analysis method showed that it is game theory that can provide the most accurate and reasonable explanation of the behavior of the players from the opposing economic interests. It seems that every approach to addressing the specific situation has its advantages and disadvantages, but pure strategies include most optimal set of factors necessary for the analysis. Thus, the application of game theory to solve the problem of optimizing production now is the most appropriate and expedient. The selected method maximizes correctly mathematically substantiate the results obtained simulation gaming schemes that quite clearly illustrates the real market situation, which, in turn, can be solved cost-effectively with the help of game theory
The article presents results of the study on the use of
associations of probiotic bacteria in black-and-white
breed calves. We have analyzed the effect of
associations of probiotic bacteria on hematological
(red blood cells and white blood cells, hemoglobin and
hematocrit) and blood biochemical parameters at
calves. It was found that the associations of strains of
Bifidobacterium bifidum DSM 20456, ATCC 29521,
and Enterococcus faecalis H22; Bifidobacterium
bifidum DSM 20456, ATCC 29521 and Enterococcus
faecium UDC 86 do not have significant changes in
the basic blood parameters of the animals, while
improving some of counts during their use
