PROGNOSIS OF RHEOLOGICAL CHARACTERISTIC OF SAUSAGES

In spite of decrease of meat import in connection with introduction of sanctions, demand and production of specialty produce are increased. High demands are lodged to meat produce for production of summer sausages. The technological defective goods of sausages not infrequently occur under use of meat raw with non-traditional autolysis and quality. For prevention of defective goods is necessary to have an opportunity to forecast the chemical content and rheological characteristics of sausages. These indexes are important for prognosis of quality of newly worked out or modernized receipts of sausages. The quality of sausages depends on qualitative indexes of minced meat. One of the indexes of minced beef is a consistence which is assessed not only organoleptically but on rheological characteristics. For production of sausages with advanced chemical content and consistence assessed under the help of rheological characteristics is necessary to work out the method of forecasting of ready goods quality. At projecting of the receipt we were offered to use the calculation of rheological and chemical-technological characteristics. There was described the classification of minced meat as heterogeneous system consisting of dispersive medium and phase. There were considered the possibilities of calculation of rheological, chemical indexes and complex chemical characteristics of minced meat and ready sausages in the work. The application of rheological methods of forecasting allows tracing the quality of sausages on any stage of production

IMPROVING THE QUALITY OF MECHANIZED OPERATIONS

The article presents analysis of the problem of increasing the quality of the implementation of mechanized operations to harvest crops and seed dressing chemicals. The quality of grain harvesting combine harvesters was considered for the new modern harvesters in terms of crop losses, grain crushing and microdamages. The quality of seed treatment is considered on the basis of the ejection slot-spraying nozzles at ultra low seed coming down with a conical distribution surface, ending rounded shape logisticians. The problem of improving the quality of the grain harvest is mainly due to its losses for the combine and injury. By the way, the amount of grain crushing almost half its losses determines the percentage of the combine. The greatest fragmentation occurs in the threshing and separating device (LSG) combines with a hammer drums and several times lower - in the axial rotor LSG. At last there is a big advantage - high performance combines that preference when replacing obsolete machines with a hammer apparatus. Quality depends on the etching uniformity of distribution of atomized liquid droplets and completeness of etching. The proposed new flowsheet Dressers fixed flow distribution and ejection-slotted spray solution of the working fluid has significant advantages: reliable processing of seeds, completeness (not less than 97%) and uniformity (98%) of dressing material. Optimal duty cycle flow of seeds created by a fixed cone with an angle of 45 degrees, the spatial arrangement of ejection nozzles relative to the flow of processed seeds provide good quality of work

PECTIN BEVERAGES WITH PROBIOTIC CHARACTERISTICS

The impact of pectins and its concentration on probiotic characteristics of the beverages has been studied for developing the formulation and technology of pectin beverages. Samples of sour-milk products with dry pectin (Unipectin OB 700) and liquid one (pectin apple extract is produced by SunLand) was made. Sour milk microorganisms and bifidobacteria content were defined. High sour milk microorganisms and bifidobacteria content as well as high rate in souring were revealed in the preparatory samples. However, liquid pectin is easier in use. Consequently, the formulation of pectin extract beverages was developed and optimized by using Mathematical Modeling. The samples of beverages were produced and their quality characteristics were evaluated. An optimal fruit/vegetable fillers / whey ration was defined to get the product which combined balanced micronutrient composition, its functional activities and gustatory qualities. For that a three-factor simplex-centroid design was used. The samples produced according to the design matrix were tasted and evaluated by color, flavor, aroma and consistency according to the ten score points scale. The findings were processed with statistical and graphical analysis. The last one used the construction of ternary graphs with the help of «Statistica 7,0» program that allowed to define the most acceptable ranges of fruit/vegetable fillers / whey components in the beverages: fruit juice – 4-16%; pumpkin juice-4-16%; whey -4%. Chemical composition, organoleptical indicators and physicochemical parameters of ready-to drink beverages were examined. As a result, these beverages have been recommended for school feeding as the source of dietary fiber, minerals and vitamins

INVESTIGATION OF THE INFLUENCE OF PARAMETERS AND MODES OF OPERATION OF THE GENERATOR OF HOT MIST ON VANS DISINFECTION EFFICIENCY

The effectiveness of disinfection depends on used disinfecting materials for vans, their actions and technological parameters of the installation for applying disinfectants. Hot mist generators provide uniform distribution of particles of disinfectant solution inside the van for transportation of agricultural products. The parameters of the generator of hot mist affecting the quality of disinfection were investigated. Tests were conducted for the vans used to transport agricultural products. For studies we used the vans in operation, which transport farm animals (pigs) and had been disinfected before. Sampling for the research on contamination was performed with pre-prepared swabs. Factorial experiment was planned with using scheme #32, and as a result of significant factors in the univariate experiments we set a temperature of the aerosol disinfectant solution and the duration of surface treatment. As an optimization function we have chosen disinfection efficiency of bodies of vehicles carrying agricultural products. Comparing the results of the experiments on different groups of microorganisms we have found that the optimal mode of hot mist generator with a dispersing device are: the processing time of 1 m2 - 8.5 at the processing temperature - 65º C

LABORATORY-FIELD TESTS OF EXPERIMENTAL DIGGER WITH MODERNIZED DIGGING THE WORKING BODIES

Potatoes in our country are one of the most cultivated cultures in agriculture. The most time-consuming process in the production of potatoes is harvesting. Currently for potato harvesting potato harvesters or diggers are used. Existing machines are not sufficiently well-behaved in adverse operating conditions such as the high and low humidity. Quality of work of the units and devices of potato harvesters depends on the digging working parts. In the process of potato harvesting up to 1000 tons of heaps from 1 hectare go through the units of the machine, which includes plant residues and dense soil out of row spacing. To eliminate or reduce the impact of this lack, on either side of the coulter we set cutting discs which prevent ingress of heaps out of row spacing. However, due to the imperfections of the design they are slipping during operation what causes accumulation and enhancing traction resistance. Based on these facts, the work on improving the digging working parts in the actual and future challenges for the country's agriculture

PROBLEMS AND PROSPECTS OF TRANSPORT TECHNOLOGY FOR VILLAGES

Modern condition agricultural transport (a significant part of it about 70%) is characterized by a strong deterioration of the rolling stock, the unsatisfactory state of the production base. More than 30% of vehicles operated outside the normative service life, the rest approaching to that state. In general, the provision of agrarian and industrial complex with agricultural vehicles is way below agrotechnical requirements. In the long term, farm machine engineering should focus on indicators of the technical level achieved by best samples of foreign agricultural machinery. Priority development is likely to receive the development of innovative technologies that provide a significant increase in productivity, efficiency and resource conservation in agriculture. To address the shortcomings of transport services agrarian and industrial complex we should improve transport technology with the use of transport logistics, expand and update the existing vehicle fleet, but due to the low solvency of agricultural companies and high prices for of automotive engineering, the problem of providing agricultural vehicles becomes most acute. Thus, the creation of new science-based solutions in technology and engineering for transportation farm produce in terms of Russia's AIC is the actual scientific and technical task that contributes significantly to the development of the country, as well as enhances the enjoyment of breakeven, competitive manufacturing

APPLIANCES, TECHNOLOGIES AND EQUIPMENT FOR HAULING OF FRUIT OUT THE GARDEN

An integral part of technological process for the cultivation of agricultural crop is the transportation issues. For their execution, we require significant energy and labor costs. The statistics show that the proportion of expenses for transportation of goods in agriculture reaches 25-40% of the total costs for ready-to-sale production, when the proportion of farm tractor transportations reaches 60% of the total. Thus, there are considerable losses of production, reaching in separate cases up to 50%. They are especially great in the harvesting and post-harvest cycles of crop production which is connected with crop damage during transportation. Large losses of fruit and vegetable products when transporting might be connected with their mechanical damage level during loading, unloading and transportation. This causes the urgency of the problem of preservation when transporting fruit and vegetables. One of the prior national issues is "... the development of directions to improve road transport maintenance with the aim of improving the quality of the transport process, which includes increasing commercial speed of freight flows by 2-3 times, increase productivity and profitability of road transport systems by 2-3 times, reducing the environmental load on nature by 20% ... " and others mentioned in the "Transport Strategy of Russia until 2020"

ANALYSIS APPROACHES TO EVALUATION OF INFORMATION PROTECTION

The article is devoted to an actual problem of information systems’ security assessment and the importance of objective quantitative assessment results receiving. The author offers the creation of complex system of information security with system approach, which will be used at each stage of information system’s life cycle. On the basis of this approach the author formulates the general scheme of an information security assessment of information system, and also the principles of an assessment’s carrying out method choice. In this work the existing methods of a quantitative assessment based on object-oriented methods of the system analysis, and also the objectivity of the received estimates on the basis of this approach are considered. On the basis of the carried-out analysis, serious shortcomings of the used modern techniques of an information systems’ security assessment are allocated, then the idea of the scientific and methodical device providing the increase of objectivity and complexity of an information assessment means on the basis of expert data formalization creation necessity was formulated. The possibility of this approach application for expeditious receiving a quantitative information security assessment in the conditions security threat’s dynamics changes, functioning and developments of information system is considered. The problem definition of automated information systems’ security assessment is executed, and the general technique of protection means of information in systems of this type was formulated

STUDY OF POLYMERIC MATERIALS PERFORMANCE IN FRICTION CONDITIONS WITH ICE AND SNOW

The problem of identifying of the most promising polymer materials for sledge sliding application. The comparison of materials is given: the bench tests of polyethylene, fluoroplast, steel and ultra high molecular weight polyethylene (UHMWPE) with different molecular weight and their composites are carried out. On the basis of research of polymeric samples on ice and snow friction in exploiting condition with the use of specially designed sledges was shown that GUR 4150 UHMWPE has the lowest mass volume and linear wear. Also in article the results of research of ice adhesion to different materials are presented. Adhesion research was carried out in low temperature conditions of air from -21oC up to -46oC and in cryocamera according method which was patented by Institute of oil and gas problems of SB RAS. The research showed that GUR 4150 UHMWPE has the lowest adhesion to ice. On the basis of obtained data the authors assumed that GUR 4150 is the most perspective materials for development of sledge sliding exploiting in Arctic conditions.

THE EFFECT OF HIGH FLAME SPRAYING MECHANICALLY ACTIVATED POWDERS OF Ti-Ni-Ta ON STRUCTURAL-PHASE STATE AND THE FUNCTIONAL AND THE MECHANICAL PROPERTIES OF SURFACE LAYERS

Based on the analysis of the phase composition, the average grain size measured by high resolution electron microscopy and multifractal parameterization structure shows the relationship of coating properties with their structural-phase state. The regularities of the evolution of the structural parameters and multifractal characteristics of the surface layers of materials with shape memory can predict the properties of the composition of the "steel-coating". On the basis of experimental studies, it has been shown that mechanical activation of powders of materials with shape memory effect based on TiNiTa makes it possible to create an effective technology training sprayed material which will generate nano-structured surface layers by high-speed flame spraying. The influence of the mechanical activation of TiNiTa powder on the quality of surface layers formed by high-speed flame spraying was investigated, and a significant improvement in the structure of the surface layer was found, with reduced porosity, high adhesion, and, consequently, increased functionality and mechanical properties. The evolution of the structure at all stages of surface modification based on the fractal approach multifractal parameterization method, which is based on qualitative analysis and instrumental methods in addition to classic microstructure parameters like grain size and specific area related to the physical and mechanical properties, is quantitative information. It was established experimentally that after high-speed flame spraying, the performance characteristics of mechanically activated shape memory TiNiTa powder improved: cyclic durability under high-cycle fatigue increased by about 35.6%, and the wear resistance increased by 3.6 times
